Bacon-Wrapped Asparagus Omelette with Goat Cheese

This delicious asparagus omelette covered in crispy bacon, filled with goat cheese, fresh arugula, cherry tomatoes, and bell peppers, topped with pomodoro sauce, is not only tasty but also very easy to prepare and healthy.

  • 20 slices bacon
  • 20 asparagus, blanched
  • cooking spray
  • 8 eggs, beaten
  • 1 pinch salt
  • 1 pinch pepper
  • 200 grams goat cheese, sliced
  • 1 cup arugula
  • 1/2 cups cherry tomato, cut in half
  • 1 cup red bell pepper, yellow, orange. Cut into strips.
  • 1/2 cups goat cheese, crumbled
  • 1 cup salsa, pomodoro
  • 1 baguette, for accompaniment

  • On a board, lay out the bacon, place an asparagus spear, and wrap it tightly. Repeat until finished.
  • Heat a T-fal® Hard Titanium+ skillet over medium heat; when the red spot (Thermo-spot) is completely red, place the bacon-wrapped asparagus in the skillet, cooking until the bacon is golden. Set aside.
  • Heat a T-fal® Hard Titanium+ skillet over medium heat; when the red spot (Thermo-spot) is completely red, spray with cooking oil, add the egg, spread until a thin layer of egg forms, season with salt and pepper to taste, cook for 5 minutes, flip the omelette. Set aside.
  • Fill the omelette with goat cheese, asparagus, arugula, cherry tomatoes, and bell pepper. Finally, add a bit of pomodoro sauce and sprinkle with goat cheese. Serve with bread. Enjoy.
