In a frying pan, place the chorizo and let it cook until done. Once ready, remove from the pan and place it on paper towels.
Place the eggs in a bowl and season with salt and pepper to taste, whisk until mixed.
Add a little butter (optional) in a frying pan for eggs, then add the cheese and chorizo, pour a little egg on top and cover, cook for 5 minutes on low heat or until the omelettes are ready.
