Cheese and Mushroom Omelette

  • 4 eggs
  • 100 grams button mushrooms
  • 100 grams Oaxaca cheese
  • 1 tablespoon unsalted butter
  • salt and pepper

  • Clean the mushrooms. In a skillet, add a little butter, then add the mushrooms and let them cook until all the water has evaporated.
  • Place the eggs in a bowl and season with salt and pepper to taste, whisk until mixed.
  • Add a little butter to another skillet for eggs, then add the cheese and mushrooms, pour some of the eggs over them, cover, and cook for 5 minutes on low heat or until the omelettes are ready.
  • Once ready, fold in half like a quesadilla and serve.
