The pepper omelette is a colorful breakfast and the best part is that if you don't have one of the peppers, you can make it with the others and it's really delicious.
Place the eggs in a bowl and season with salt and pepper to taste, beat until mixed.
Add a bit of butter to another pan for eggs, then add the cheese and peppers, pour a little of the eggs over them and cover, cook for 5 minutes on low heat or until the omelettes are ready.
Once ready, fold in half like a quesadilla and serve.
