Pepper Omelette

The pepper omelette is a colorful breakfast and the best part is that if you don't have one of the peppers, you can make it with the others and it's really delicious.

  • 4 eggs
  • 100 grams Oaxaca cheese
  • unsalted butter
  • salt
  • pepper
  • 1/2 red bell peppers, cut into cubes
  • 1/2 red bell peppers, cut into cubes
  • 1/2 yellow bell peppers, cut into cubes

  • Sauté the peppers with a bit of butter.
  • Place the eggs in a bowl and season with salt and pepper to taste, beat until mixed.
  • Add a bit of butter to another pan for eggs, then add the cheese and peppers, pour a little of the eggs over them and cover, cook for 5 minutes on low heat or until the omelettes are ready.
  • Once ready, fold in half like a quesadilla and serve.
