  • 2 cups chorizo
  • 1/2 cups onion
  • 3 cups whole black beans, with little broth
  • cilantro, finely chopped
  • Cotija cheese, crumbled
  • vegetable oil
  • árbol chile
  • egg
  • corn tortillas, handmade
  • orange juice, to accompany

  • Sauté the chorizo in a saucepan over medium heat for 5 minutes or until it begins to release fat. Add the onion and black beans and simmer for 30 minutes or until the broth begins to thicken. Set aside.
  • Toast the dried chiles in a skillet with a little oil over low heat, then remove and set aside. Cook the fried egg in the same skillet.
  • Serve the beans, fried egg, árbol chili, and Cotija cheese on a plate. Accompany the ranch-style breakfast with handmade tortillas and orange juice.
