Northern Style Migas Tacos with Avocado, Bell Pepper, and Cherry Tomato

  • 3 Tía Rosa® wheat flour tortillas
  • 2 eggs
  • 2 corn tortillas, cut into small triangles and fried
  • 1/2 Avocados from México, cut into small cubes
  • 1/2 red bell peppers, cut into small cubes
  • 9 cherry tomatoes , cut in halves
  • 1 cuaresmeño chile, finely chopped
  • 20 milliliters vegetable oil
  • 2 pinches salt
  • 1 pinch ground pepper

  • Heat oil in a skillet, add the fried tortillas, and immediately add the beaten eggs, mixing very well so the egg sticks to the tortilla.
  • Add the bell pepper, chili, and season with salt and pepper.
  • Warm Tía Rosa® Tortillinas® and serve a tablespoon of northern migas.
  • Finish the tacos by adding avocado and cherry tomato.
