  • For the red sauce, in a pot over medium heat, heat the oil and fry the onion, garlic, tomatoes, and chilies until very soft. Add the chicken broth and let it reduce by half, season with salt and pepper.
  • Blend the previous preparation until you obtain a smooth sauce and set aside.
  • For the green sauce, in a pot over medium heat, boil the water, add the onion, garlic, tomatoes, and chili. Cook until the tomatoes change color, about 20 minutes. Drain.
  • Blend the cooked vegetables along with the cilantro until you obtain a homogeneous mixture. Fry in a pot over medium heat with a tablespoon of oil for about 10 minutes. Season with salt and pepper to taste.
  • In a skillet over low heat, heat two tablespoons of oil and cook the eggs to your desired doneness, season with salt and pepper.
  • Heat the Northgate corn tortillas on a griddle. Serve a fried egg on each tortilla, a tablespoon of green sauce and one of red sauce, whole black beans, and garnish with cream, fresh cheese, and avocado in cubes.
