Flower of Itabo with Eggs

  • 2 cups itabo flower
  • 2 eggs
  • 1 pinch pepper
  • 1/4 tablespoons garlic
  • 1 tablespoon olive oil

  • Rinse the flowers, dry them, and make sure to remove all the seeds.
  • After doing that, place them in a pot and cover the flowers with water, bring to a boil until they are soft, but not too much, as if you were boiling noodles. Once the flowers are boiled, remove them and drain.
  • In a skillet, add the oil and heat it up, once the oil is hot, add the flowers with all the spices and stir in the two eggs with the flowers.
  • Finally, just make sure the eggs are cooked.
