Open the croissants in half, spread with mayonnaise, and fill with turkey breast and panela cheese. Close with the top of the croissant and decorate with strips of red bell pepper on the sides to simulate the crab's legs. Place peppers on the tips of the croissant to simulate the claws.
Decorate with mini mozzarella cheese to form the eyes and half a black olive.
