Healthy Hot Cakes

  • 1 cup rice flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoons salt
  • 2 tablespoons butter, melted
  • 1 cup Bionda® cottage cheese
  • 3 eggs
  • 1/2 cups milk
  • 1 teaspoon vanilla essence
  • cooking spray
  • icing sugar, for decoration
  • mixed berries, for decoration
  • peppermint, for decoration

  • Mix the rice flour with the baking powder, sugar, salt, butter, Bionda® cottage cheese, egg, milk, and vanilla in a bowl until fully combined. Let it rest for 5 minutes.
  • Heat a non-stick skillet over medium heat, then spray a little vegetable oil and pour in some of the mixture. Use a ring to make it thicker, cook the hot cake for about 5 minutes, and cover the skillet to help speed up the cooking. Repeat the process until you finish the mixture.
  • Serve the healthy hot cakes with powdered sugar, berries, and mint.
