In a medium bowl, mix the cottage cheese, cream, and vanilla.
In a small bowl, mix the baking soda, baking powder, flour, and a pinch of salt.
Slowly add to the cottage cheese mixture.
Using a whisk, beat the egg whites and sugar until stiff peaks form and it reaches a meringue-like consistency.
Gently fold the cottage cheese mixture into the egg whites using a spatula.
Heat a skillet, and when it’s very hot, spray with cooking spray. Using a 1/4 cup measure, add the mixture to the skillet and spread it to form a hotcake.
Cook for 2-3 minutes until lightly golden, flip, and cook for another minute or two.
