1 teaspoon canola oil
1 tomato, in diced seedless pieces
1 chives, finely chopped
1/2 serrano chiles, seedless, chopped
1/3 cups tortilla chips, baked (not fried)
1/4 cups Manchego cheese, reduced fat

Whisk the eggs along with the egg whites. Heat the oil in a skillet over medium heat. Add the eggs and cook, stirring occasionally for one minute.
Add the tomato, green onion, chili, and crushed tortilla chips. Cook until the eggs are tender.
Season with salt and pepper, serve on a plate, and sprinkle the cheese on top.
