  • 1 teaspoon canola oil
  • 1 tomato, in diced seedless pieces
  • 1 chives, finely chopped
  • 1/2 serrano chiles, seedless, chopped
  • 1/3 cups tortilla chips, baked (not fried)
  • 1/4 cups Manchego cheese, reduced fat
  • salt

  • Whisk the eggs along with the egg whites. Heat the oil in a skillet over medium heat. Add the eggs and cook, stirring occasionally for one minute.
  • Add the tomato, green onion, chili, and crushed tortilla chips. Cook until the eggs are tender.
  • Season with salt and pepper, serve on a plate, and sprinkle the cheese on top.
