Burrito Casserole

  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 1/2 cups tomato, finely chopped
  • 1 cup chorizo
  • 8 eggs
  • 8 burrito-sized flour tortillas
  • 2 cups refried beans
  • 1/4 cups butter, melted
  • 2 cups cheese, grated
  • cilantro, finely chopped, for garnish

  • Heat the oil in a pan over medium heat and cook the onion for 5 minutes, then add the tomato, chorizo, and continue cooking for 10 minutes. Finally, pour in the eggs and cook for another 10 minutes, or until well cooked.
  • Spread the flour tortillas and spread the beans, then add the egg with chorizo and close the burrito on the sides. Roll tightly to ensure the filling doesn't spill out and arrange them in a baking dish. Set aside.
  • Brush the breakfast burritos with butter, top with cheese, and broil in the oven at 180 °C for 10 minutes or until the cheese is golden.
  • Garnish the burrito casserole with finely chopped cilantro.
