Chilaquiles Cake

Chilaquiles are a typical Mexican dish that combines many nutritious ingredients such as chicken, the vegetables from the sauce, and carbohydrates from the tortilla. This is a different version from traditional chilaquiles; it's a delicious cake bathed in sauce.

  • 1 kilo tortillas
  • 2 chicken breasts, cooked and shredded
  • 20 tomatillos
  • 5 green chiles
  • 1 teaspoon chicken broth , or a seasoning cube
  • 1/2 onions, slice
  • 1 bell pepper , medium, in strips
  • 1/2 kilos Chihuahua cheese, or grated gouda
  • 1/4 cream

  • Preheat the oven to 180°C. Meanwhile, fry the tortillas cut into triangles in a little oil. Another alternative would be to put them in the oven until they are golden brown. Cook the chicken, shred it, and set aside.
  • Cook the tomatillos and chiles, and when blending the sauce, add chicken broth. Set aside.
  • In a pan, sauté the onion and bell pepper; once cooked, add the sauce, let it simmer for 5 minutes, and then add the cream.
  • To assemble the cake, incorporate the ingredients one by one. Start by making a layer of tortillas in a baking dish, then add a layer of cooked chicken, another of sauce, and finally cheese to taste. Repeat this step until all ingredients are used, finishing with cheese on top.
  • Cover with aluminum foil and place in the oven for approximately 30 minutes or until the cheese is golden brown.
