400 grams tortillas
200 grams red tomato
1/2 onions
2 cloves garlic
2 Jalapeño chiles
20 grams fresh cilantro
1 teaspoon ground cumin
4 eggs
salt and pepper
queso fresco

onion, fileted, for decoration
vegetable oil, for frying

In a skillet, place the vegetables to roast, except for the cilantro, for about 10 minutes.
Blend all the roasted vegetables and season with salt and pepper.
Cut the tortillas into triangles and fry them in a little hot oil.
Mix the fried tortillas with the hot red sauce.
In a skillet with a little oil, fry the eggs separately.
To serve, place the chilaquiles with the sauce on a plate, add a little cream, cheese, onion, and the egg on top. Decorate with a sprig of cilantro.
