  • 400 grams tortillas
  • 200 grams red tomato
  • 1/2 onions
  • 2 cloves garlic
  • 2 Jalapeño chiles
  • 20 grams fresh cilantro
  • 1 teaspoon ground cumin
  • 4 eggs
  • salt and pepper
  • queso fresco
  • sour cream
  • fresh cilantro, for decoration

  • In a skillet, place the vegetables to roast, except for the cilantro, for about 10 minutes.
  • Blend all the roasted vegetables and season with salt and pepper.
  • Cut the tortillas into triangles and fry them in a little hot oil.
  • Mix the fried tortillas with the hot red sauce.
  • In a skillet with a little oil, fry the eggs separately.
  • To serve, place the chilaquiles with the sauce on a plate, add a little cream, cheese, onion, and the egg on top. Decorate with a sprig of cilantro.
