Chorizo and Egg Crumbs

  • 4 pieces of bread, can be bolillo or sandwich bread
  • vegetable oil, for frying
  • 1/4 cups onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 1 cup longaniza, in cubes
  • 1/2 cups green bell pepper, in cubes
  • 1/2 cups yellow bell pepper, in cubes
  • 4 eggs
  • salt, for the egg
  • pepper, for the egg
  • 1 cup Ground Tomatoes Del Fuerte® Origin
  • 1/4 cups queso fresco, grated, for decoration
  • parsley, only leaves, for decoration
  • 1 avocado, sliced, for decoration

  • Place the bread on a flat, clean surface, cut into cubes with the help of a serrated knife, add to a bowl and set aside.
  • Heat the oil in a pan over medium heat and add the onion and garlic. Once the onion is transparent, add the sausage, cook for 5 minutes, and then add the green and yellow bell pepper, mixing very well.
  • Add the eggs to a bowl, then season with salt and pepper and whisk thoroughly with a whisk, then add to the mixture along with the bread, cooking for 5 minutes, until the egg is tender. Subsequently, pour in the Tomates Molidos Del Fuerte Origen®, mix very well, and adjust the seasoning. Cook the crumbs until the Tomates Molidos Del Fuerte Origen® have been absorbed into the preparation.
  • Serve the chorizo and egg crumbs on a plate and decorate with fresh cheese, parsley, and avocado.
