Chorizo Quesadillas

  • 6 corn tortillas
  • 200 grams chorizo, sliced
  • 300 grams Oaxaca cheese
  • 2 cloves garlic
  • 1/2 onions, chopped
  • 2 tablespoons vegetable oil
  • salt, to taste
  • cherry tomatoes
  • baby arugula

  • Start by preparing the filling. Heat a tablespoon of vegetable oil in a medium-sized skillet.
  • Add the onion and garlic, sauté for 2-3 minutes. Add the chorizo and cook for 5 minutes or until well cooked. Season with salt and pour into a deep plate.
  • Fill the tortillas with chorizo, a bit of arugula, halved cherry tomatoes, and a little cheese. Cook the quesadillas on a griddle until the cheese melts.
