Eggs in a Corn Husk with Hoja Santa

We bring you the traditional eggs in a corn husk, but now we add a very Mexican ingredient: hoja santa!   • 500 grams masa dough
  • water
  • salt
  • hoja santa
  • 6 San Juan® eggs
  • 1 clove garlic, roasted, for the sauce
  • 1/4 onions, roasted, for the sauce
  • 10 piquín chiles, roasted, for the sauce
  • 3 tomatillos, roasted, for the sauce
  • salt, for the sauce
  • cilantro, for decoration
  • pot beans, to accompany

  • In a bowl, mix the dough, water, and salt. Knead until you obtain a hydrated and fresh dough; it should stick slightly between your hands.
  • Line a tortilla press with plastic, place a ball of dough, and flatten it slightly. When the tortilla is the size of the hoja santa, press again to create an impression of the hoja on the tortilla.
  • Cook the tortilla on a comal for 3 to 5 minutes, and when it starts to puff up, open it with a knife to fill it with a piece of Huevo San Juan®. Then, cook over medium heat for 2 to 3 minutes on both sides. Set aside.
  • For the sauce: crush the garlic, onion, and chiles in a molcajete. When the ingredients are crushed, add the tomatoes, season, and set aside.
  • Place a bed of beans on a clay plate, add the eggs in a corn husk on top, and crown with the blended sauce. Decorate the eggs in a corn husk with hoja santa and cilantro.
