Shred the Oaxaca cheese and place it on a plate. If you opted for yellow cheese, grate it and set aside.
Assemble the sincronizadas by placing a flour tortilla and on top of it a slice of ham, which can be as thick or thin as you prefer.
Now, place a bit of cheese making sure it is centered so that when it melts, it doesn't spill out. Place a tortilla on top covering each sincronizada.
Place a sincronizada in a flat pan, cook over medium heat or until the cheese melts. Flip it over after five minutes to prevent burning; remember that flour tortillas burn more easily.
Once assembled, open them in half and place a leaf of lettuce inside (previously disinfected and spun dry).
You can make the chipotle and cream mixture and place it on top of each sincronizada or serve it on the side for everyone to add as they wish.
