Italian Quesadillas

You can fill the quesadillas with whatever you like; I loved this Italian Quesadillas recipe, try them and see how delicious they are.

  • 2 tomatoes, in slices
  • olive oil
  • panela cheese, in slices
  • 1/4 red onions, in rounds
  • basil
  • 250 grams Manchego cheese
  • 8 flour tortillas
  • salt
  • pepper

  • On a baking sheet, place the tomatoes with the onion and basil, then drizzle with olive oil, salt, and pepper. Let it rest for 10 minutes.
  • In the middle of the tortillas, place panela cheese, then tomato, onion, and basil, and finally a slice of manchego cheese, and cover with another tortilla.
  • On a tortilla, place a layer of peach, a layer of onion, a layer of cheese, and finish with another tortilla.
  • On a griddle, heat the assembled quesadillas until the cheese is melted and the tortillas are slightly golden.
  • Cut the quesadillas into 4 and serve them with more basil leaves.
