Mole Chilaquiles

This mole chilaquiles recipe is a delight. Dare to prepare them and change the flavor of traditional chilaquiles for these mole chilaquiles.

  • 1 teaspoon vegetable oil
  • 1 clove garlic, finely chopped
  • 1/2 cups onion, chopped
  • 2 cups mole sauce
  • 1 1/2 cups water
  • 2 cups chicken broth
  • 1/2 chocolates
  • vegetable oil
  • 8 tortillas, cut into triangles and from the day before
  • 1/3 cups sour cream
  • 3/4 cups queso fresco, crumbled
  • 2/3 cups fresh cilantro, chopped

  • In a pot, heat the oil and fry the garlic and onion until slightly golden.
  • Add the mole with the water and mix until completely integrated.
  • Once it boils, add the chicken broth and the chocolate.
  • In a large skillet, add about 1 cm of oil. Fry half of the tortillas until they are slightly browned, about 3 minutes.
  • Repeat the previous step with the remaining tortillas.
  • Place the tortillas on disposable kitchen towels to drain some of the grease.
  • Place the totopos on a plate and drizzle with the mole. Garnish with cream, fresh cheese, and cilantro.
