Tricolor Chilaquiles

  • 1 tablespoon vegetable oil
  • 1 clove garlic, chopped
  • 1 onion, chopped
  • 3 guajillo chiles, seedless
  • 2 árbol chiles, seedless
  • 5 tomatoes
  • 1 cup chicken broth
  • 1 teaspoon salt
  • water
  • 8 tomatillos
  • 3 serrano chiles, without tail
  • 1/2 onions
  • 2 cloves garlic
  • 1 cup fresh cilantro, ½ cup for cooking and ½ cup for blending
  • 1 teaspoon salt
  • 1 teaspoon vegetable oil
  • 5 cups tortilla chips
  • 1 cup chicken, cooked and shredded
  • 1/4 cups sour cream
  • 3 slices Manchego cheese
  • fresh cilantro, for decoration
  • avocado, in cubes for decoration
  • green onion, in rings, for decoration
  • chorizo, for decoration

  • Preheat the oven to 180°C.
  • For the red sauce, heat a deep skillet over medium heat with oil and cook the garlic with the onion, guajillo pepper, árbol chili, and tomato until soft.
  • Add the chicken broth, bring to a boil and let it reduce by half, season with salt, remove from heat and blend until smooth, strain and set aside.
  • For the green sauce, heat a small pot over medium heat with water, cook the tomatoes, serrano chili, white onion, garlic, and half of the cilantro until the tomatoes change color. Drain and blend with the rest of the cilantro and salt until smooth.
  • Heat a small pot over medium heat with oil and fry the sauce until it reduces and thickens slightly, season and set aside.
  • Place the tortilla chips in a baking dish, cover half with green sauce, and the other half with red sauce, place the chicken, cream, and cheese in the middle forming the flag, and bake until the cheese is melted.
  • Remove from the oven, decorate with cilantro, avocado, scallion rings, and chorizo. Serve with beans.
