Zucchini Flower Enfrijoladas

A different recipe from traditional enfrijoladas, but with the touch of zucchini flowers is delicious!!

  • 10 corn tortillas
  • pumpkin flowers
  • cream
  • 2 cans refried beans
  • amaranth
  • oaxaca cheese

  • Make rolls with zucchini flowers, Oaxaca cheese, and tortillas. You can add as much zucchini flower and cheese as you want.
  • Arrange the rolls in a Pyrex dish.
  • The beans can be heated with a little water to make them more liquid. You can also blend the whole cooked beans to make the sauce.
  • Add the sauce on top of the Pyrex and place it in a low oven for 10 to 15 minutes.
  • After taking the Pyrex out, add cream and amaranth on top for an extra touch.
