Omelette a la Valladolid

  • 6 eggs
  • 1/2 cups longaniza
  • 1/2 teaspoons oil
  • salt and pepper
  • 5 tablespoons beans
  • 20 grams Oaxaca cheese
  • 1/4 cups cream cheese
  • 1/6 cups tomatillo, in strips
  • 1/6 cups onion, in strips and cooked

  • In a bowl: crack the eggs and beat them. Fry the chorizo.
  • Add salt, pepper, and the fried chorizo, then mix it.
  • Add oil to the pan and pour in the mixture; the pan should be on low heat, keep moving so that the mixture forms a tortilla.
  • Immediately add pieces of cream cheese to the fresh egg omelette.
  • Wait for the egg to start solidifying, and when that happens, add strips of Oaxaca cheese, tomato, and onion. The onion should be fried before adding it.
  • Fold the omelette and garnish it with pieces of tomato and cilantro leaves.
