Banana Hot Cakes

  • 2 bananas, peeled and sliced
  • 1 tablespoon sugar
  • 2 cups Gamesa® pancake mix
  • 1 2/3 cups cow's milk
  • 2 eggs
  • 2 tablespoons butter, melted
  • 1 cup ripe banana, mashed
  • 1 teaspoon cinnamon
  • 1 cup maple syrup, heated
  • 1/2 cups walnuts, chopped and toasted

  • Mix the sliced bananas with the sugar in a small bowl and set aside.
  • Prepare 2 cups of Gamesa® Hot Cake Flour according to the package instructions, mixing the flour with milk, eggs, and melted butter. Stir with a whisk until there are no lumps.
  • Add the mashed banana and cinnamon to the hot cake mixture and stir well.
  • Heat a non-stick skillet and add a little butter to grease it. Pour 1/4 cup of the hot cake mixture forming a circle and place 3-4 slices of banana on top. When bubbles begin to form, flip them over and cook for 1 more minute, until golden brown.
  • Serve immediately with warm maple syrup and chopped nuts.
