Easy Oatmeal Pancakes

These oatmeal pancakes will delight your little one at dinnertime, as they will seem something totally different and fun. They will want more, so treat them with delicious and healthy meals!

  • 1 cup oats
  • 1 cup water
  • 2 bananas
  • 1 teaspoon baking powder, aluminum-free
  • 2 eggs
  • 1/4 cups milk, plant-based
  • 1/4 cups coconut oil
  • 1/3 cups papaya, in triangles
  • 1/4 cups strawberries, slices

  • Add the oats and water to a bowl, then let it rest for 5 minutes. Drain well and rinse to remove any flour and starch from the oats. Set aside.
  • Blend the banana, oats, baking powder, egg, and milk on medium speed until the ingredients are perfectly combined. Set aside.
  • Add the coconut oil to a pan over medium heat and pour the mixture in small circles using a small ladle. Cook the oatmeal pancakes for 2 minutes on each side until they achieve a light brown color.
  • Serve two to three pancakes on a flat plate, accompany with papaya and decorate with strawberries.
