Flourless Carrot Pancakes

Give your pancakes a healthy twist, as carrots are rich in vitamin A, which benefits your skin and eyesight, strengthens the immune system, and supports growth during pregnancy.

  • 1 ripe banana
  • 1 cup carrot, grated
  • 1 egg
  • 1/4 cups oats
  • 1/2 teaspoons cinnamon powder
  • 2 tablespoons walnuts, in pieces
  • 3 tablespoons Nutrioli Dha® soy oil
  • banana, in slices for decoration
  • walnuts, chopped, for decoration
  • cinnamon powder, for decoration
  • honey, to accompany

  • Place the banana in a bowl and mash with a fork, add the grated carrot, the egg, the oats, one tablespoon of Nutrioli® DHA, and the cinnamon.
  • Heat a skillet and lightly grease with Nutrioli DHA® oil, pour a ladle of the mixture, and add the nuts. Cook until bubbles form, carefully flip, and cook on the other side. Repeat until the mixture is finished.
  • Serve the pancakes on a plate and decorate with slices of banana, nuts, and cinnamon. Accompany with honey.
