Fluffy Breakfast Pancakes

  • 1 1/4 cups wheat flour
  • 3/4 cups cow's milk
  • 2 tablespoons white vinegar
  • 1/2 teaspoons baking powder
  • 1/4 teaspoons baking soda
  • 1/4 teaspoons salt
  • 2 teaspoons sugar
  • 180 grams butter, melted
  • 1 egg

  • To 3/4 cup of milk, add 2 tablespoons of vinegar and let it rest for about 5 minutes.
  • In a bowl, mix the dry ingredients: flour, baking powder, baking soda, salt, and sugar.
  • Add the melted butter, the egg, and finally the milk you reserved.
  • Mix with a whisk or in a blender until all the ingredients are well incorporated, approximately 1 to 2 minutes.
  • Heat a skillet or griddle over medium heat, spread a little butter, and add the mixture to form the pancake; let it cook on one side, then flip it to finish cooking.
  • Repeat this last step until the mixture is finished.
