Fruit Hot Cakes

Wake up the little ones at home with the magical and delicious smell of warm hot cakes, made with almond flour, filled with fruit, and a soft and delightful hint of vanilla.

  • 1 1/4 cups almond flour
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 2 tablespoons honey, organic
  • 1/4 cups low-fat milk
  • 1 banana, sliced
  • 1 strawberries, sliced
  • mixed berries, for serving
  • low fat greek yogurt, sugar-free, for serving

  • In a bowl, add the almond flour, egg, baking powder, vanilla extract, baking soda, salt, organic honey, and skim milk. Mix until combined and obtain a homogeneous mixture.
  • Pour the mixture into a squeeze bottle. Set aside.
  • In a non-stick skillet over medium heat, pour the hot cake mixture. Add some sliced banana and strawberries, and cover with more hot cake mixture. Cook for 4 minutes on each side.
  • Serve the hot cakes on a flat plate and accompany with Greek yogurt, raspberries, and blackberries.
