1 cup pancake mix
3/4 cups cow's milk
1 egg
1 tablespoon butter, melted
1 apple, grated
1/4 cups amaranth
2 tablespoons oats
2 tablespoons walnuts, chopped
agave syrup, to accompany

Mix the pancake flour with the milk, egg, and butter. Set aside.
Separately, lightly toast the amaranth, oats, and nuts, and add to the previous mixture.
Add the apple and mix completely.
Make the pancakes on a preheated griddle, lightly greased with butter.
Cook on both sides, flipping with the help of a spatula, and serve hot drizzled with a little agave syrup.
