Happy Faces Multigrain

These delicious and nutritious apple, oat, and amaranth pancakes are the favorites of the little ones in the house.

  • 1 cup pancake mix
  • 3/4 cups cow's milk
  • 1 egg
  • 1 tablespoon butter, melted
  • 1 apple, grated
  • 1/4 cups amaranth
  • 2 tablespoons oats
  • 2 tablespoons walnuts, chopped
  • agave syrup, to accompany

  • Mix the pancake flour with the milk, egg, and butter. Set aside.
  • Separately, lightly toast the amaranth, oats, and nuts, and add to the previous mixture.
  • Add the apple and mix completely.
  • Make the pancakes on a preheated griddle, lightly greased with butter.
  • Cook on both sides, flipping with the help of a spatula, and serve hot drizzled with a little agave syrup.
