Oat Pancakes

These are classic pancakes but a little healthier and lower in calories. Try these delicious oat pancakes, you will love them.

  • 1/2 cups oats, ground
  • 1/2 cups flour , (white or whole wheat)
  • 1 egg
  • 3/4 cups cow's milk
  • 1 teaspoon baking powder
  • 1 teaspoon sugar , (or splenda)
  • 2 tablespoons oil , (olive or vegetable)
  • 1 tablespoon liquid vanilla

  • All dry ingredients (oats, flour, sugar, and baking powder) are combined.
  • The oil, vanilla, and milk are added to the dry ingredients.
  • The egg is added.
  • Everything is whisked together very well with a whisk.
  • Once well mixed, a little oil (just enough to prevent sticking) is put in a pan or griddle, and the excess is wiped off with a napkin.
  • The mixture is poured into the pan and cooked for about 3 minutes on each side.
