Pancakes with Blackberries

Delicious pancakes with blackberries. Made at home, having the blackberries inside the batter will impress everyone, it’s a gourmet recipe for a breakfast that both adults and kids will love!

  • 2 eggs
  • 2 cups cow's milk
  • 1 tablespoon lemon juice
  • 6 tablespoons unsalted butter
  • 1 1/2 cups flour
  • 1/4 cups sugar
  • 2 tablespoons baking powder
  • 1/2 tablespoons salt
  • 1 cup strawberry
  • 1 cup blueberry
  • cooking spray

  • Add the lemon juice to the milk and let it sit for 5 minutes.
  • In a deep bowl, mix the eggs and the lemon milk.
  • Add the melted butter.
  • In another deep bowl, mix the flour, sugar, baking powder, and salt.
  • Add the dry ingredients to the wet ingredients and combine.
  • Add 1/3 cup of strawberries and 1/3 cup of blackberries to the mixture.
  • Take a large skillet, grease it with cooking spray, and heat it up.
  • For each pancake, pour 1 large tablespoon or 3 regular tablespoons of batter.
  • Cook for 3 minutes, then flip and cook for 2 more minutes on the other side.
  • Transfer the pancakes to a plate and cover them to keep warm while you make the rest.
  • In a deep bowl, mix the leftover blackberries and strawberries.
