Peach Pancakes

These pancakes have peach halves on top, giving them a completely different and delicious touch. I love them for a change from the usual. They are served with maple syrup. Ideal for Sundays.

  • 1 egg
  • 1 cup sour cream
  • 3 tablespoons cow's milk
  • 1/4 teaspoons vanilla essence
  • 2 tablespoons sugar
  • 1/4 teaspoons salt
  • 1/4 teaspoons cinnamon, (optional)
  • 1 pinch nutmeg, (optional)
  • 3/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoons baking soda
  • 1 peach, in slices
  • butter, as needed

  • Beat the egg with the sour cream, sugar, vanilla, and egg.
  • In another bowl, stir together the salt, cinnamon, nutmeg, flour, baking powder, and baking soda.
  • Mix the dry ingredients with the sour cream. If the mixture is too thick, add milk, one tablespoon at a time.
  • Heat a large skillet and add a little butter.
  • Place the pancake batter and top each pancake with 2 slices of peach half.
  • When bubbles form (after 3-4 minutes), flip and let brown for 5 minutes.
  • Serve hot.
