Pear and Walnut Pancakes

  • 1 cup Gamesa® pancake mix
  • 1 tablespoon cinnamon powder
  • 3/4 cups low-fat milk
  • 1 egg
  • 1 tablespoon vegetable oil
  • 1 pear, chopped (about 1 cup)
  • 3/4 cups oats
  • 2 tablespoons pecans, toasted, chopped
  • 3/4 cups maple syrup
  • pears, sliced and warm (optional)
  • pecans, chopped for garnish (optional)

  • In a large bowl, add Gamesa® Pancake Mix and cinnamon. In a separate bowl, mix milk, egg, and oil until a smooth mixture forms. Combine both mixtures and stir until there are no lumps. Carefully add the pear, oats, and walnuts. Let it thicken for 1 to 2 minutes.
  • In a hot greased skillet, add 1/4 cup of the mixture and cook until the bottom of the pancake is golden brown and bubbles appear on top. Flip it over and repeat until all the mixture is used.
  • Serve the pancakes with maple syrup and if desired, garnish with additional slices of pear and walnuts.
