Red Velvet Pancakes

  • 2 cups Santa Clara® whole milk
  • 2 cups flour
  • 3 tablespoons cocoa
  • 2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 2 tablespoons apple cider vinegar
  • 1/2 cups sugar
  • 2 eggs
  • 1 1/2 tablespoons red food coloring
  • 2 teaspoons liquid vanilla
  • 1/3 cups unsalted butter , melted
  • strawberries, washed and disinfected
  • raspberries
  • peppermint, washed and disinfected
  • 170 grams cream cheese, for the icing
  • 3 tablespoons unsalted butter , at room temperature
  • 2 cups powdered sugar
  • 1/2 cups Santa Clara® whole milk
  • 1/2 teaspoons liquid vanilla

  • In the mixer, combine the flour with the cocoa, baking powder, baking soda, and salt. Add the vinegar to the Santa Clara® Whole Milk and let it rest for 5 minutes.
  • Add the eggs, sugar, melted butter, vanilla, and red food coloring to the Santa Clara® Whole Milk. Mix until well combined.
  • Gradually incorporate the dry ingredients into the wet ones. Grease a hot skillet with butter and pour ¼ cup of the previous mixture.
  • Flip the pancake when bubbles form on one side. Repeat this process with the remaining batter.
  • Soften the cream cheese with the butter and gradually add the powdered sugar. Mix and add the Santa Clara® Whole Milk and vanilla.
  • Pour a bit of the cream cheese icing over the pancakes. Decorate with some berries and mint leaves.
