Soft Oat Pancakes

  • 4 1/2 cups oats
  • 4 cups milk
  • 4 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 1/4 teaspoons salt

  • Blend the oats until you obtain a flour.
  • Mix 3 cups of milk and the egg yolks along with the vanilla. Then, add the flour all at once and integrate well until there are no lumps.
  • Beat the egg whites with the sugar and a pinch of salt until stiff peaks form.
  • Gently fold the whipped egg whites into the flour mixture.
  • Pour the mixture into the pan, allowing it to spread on its own, and cover.
  • When the surface of the pancake has small holes, flip it with a spatula and cover again.
  • Repeat the step until you finish with the mixture.
  • You can enjoy them on their own or accompany them with dulce de leche, jam, or honey.
