Spanish Egg White Tortilla

  • 480 grams San Juan® egg whites
  • 60 grams white onion
  • 12 asparagus
  • sliced bread , toasted
  • oil
  • potato , cooked
  • salt and pepper

  • Place oil in a hot skillet to sauté the onion. Incorporate the previously beaten egg whites and season with salt and pepper. Let cook until a kind of tortilla forms.
  • Cut the base of the asparagus (about 2 cm) and grill in a skillet with salt and pepper. Remove when golden brown.
  • Toast the pieces of bread and once toasted, flatten and trim the edges. Cut diagonally in half.
