Chop the onion into small cubes.
Clean the bell pepper, remove the stem, and cut it into strips; slice the chorizo into small rounds
Peel and clean the potatoes, cut them into small cubes of 1/2 centimeter. (They can be soaked for 20 minutes in water to remove the starch)
Add the onion to the skillet until it becomes translucent, then add the potatoes, season to taste, and fry on low heat for 25-30 minutes.
Beat the eggs, place them in a large bowl, salt to taste, add the potatoes along with the bell pepper or chorizo, and mix well.
Separate the edges, cover the skillet with a plate larger in diameter than the skillet, and flip it over.
Place the skillet back on the heat, add a drizzle of the reserved oil, and add the mixture. Wait (20 seconds) for it to start to set, about 10 min.
Serve.
