Spanish Potato Omelette

  • 3 potatoes, or potatoes
  • 1 onion
  • 1 red bell pepper
  • 250 grams chorizo
  • 1/2 glasses olive oil
  • 3 cloves garlic, optional

  • Chop the onion into small cubes.
  • Clean the bell pepper, remove the stem, and cut it into strips; slice the chorizo into small rounds
  • Peel and clean the potatoes, cut them into small cubes of 1/2 centimeter. (They can be soaked for 20 minutes in water to remove the starch)
  • Add the onion to the skillet until it becomes translucent, then add the potatoes, season to taste, and fry on low heat for 25-30 minutes.
  • Beat the eggs, place them in a large bowl, salt to taste, add the potatoes along with the bell pepper or chorizo, and mix well.
  • Separate the edges, cover the skillet with a plate larger in diameter than the skillet, and flip it over.
  • Place the skillet back on the heat, add a drizzle of the reserved oil, and add the mixture. Wait (20 seconds) for it to start to set, about 10 min.
  • Serve.
