Tamale Cake

  • 2 tablespoons vegetable oil
  • 1/2 cups onion
  • 2 cloves garlic, without skin
  • 2 cups tomatillo
  • 1/2 cups chicken broth
  • 3 Jalapeño chiles, in strips
  • salt, for the sauce

  • corn husks, rehydrated
  • 4 cups masa mix for tamales
  • 1 cup lard
  • 2 1/2 cups chicken broth
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 cups pork, cooked and diced
  • 6 bolillo rolls

  • For the sauce: Heat the oil in a pot and cook the onion, garlic, tomatillo, and jalapeño pepper. Cook for 10 minutes.
  • Blend the tomato, chili, onion, and garlic from the previous step with the chicken broth, season with salt and pepper. Set aside.
  • Mix the tamale flour and lard in the mixer for 5 minutes or until well combined. Then, gradually add water until you have a smooth and moist dough. Add the baking powder and salt, mix for 10 minutes, and set aside.
  • Place a tablespoon of tamale dough on each tamale leaf, along with a tablespoon of sauce, pork meat, more sauce, and cover with more dough. Close the tamale leaf and fold the bottom part of the leaf.
  • Cook the green tamales in a double boiler for 40 minutes.
  • Cut the bolillo in half, place the tamale inside, and enjoy your tamale cake.
