Make the pastry for the tart by mixing in the processor the flour, salt, beaten egg, 1 1/2 tablespoons of olive oil, 6 tablespoons of butter, and cold milk. Place the dough in the refrigerator for 30 minutes.
Preheat the oven to 180 degrees Celsius (350 Fahrenheit). Roll out the pastry and place it in a tart pan. Bake it for 10 minutes with beans (to maintain its shape). Remove the beans and add Parmesan cheese. Bake for another 15 minutes until golden.
Put the oil in a skillet and sauté the leek. Add the onions and sauté for about 25 minutes. Season with salt and pepper and place in the tart. Add the beaten egg and grated Gruyère cheese. Bake for 15 minutes and serve hot.
