Waffles with Berries and Cinnamon

  • 2 cups flour
  • 2 tablespoons baking powder
  • 1/2 tablespoons salt
  • 4 eggs, separated egg yolks and whites
  • 2 tablespoons sugar
  • 2 cups whole milk
  • 1/2 sticks unsalted butter
  • 1/2 tablespoons vanilla essence
  • 2 tablespoons cinnamon powder
  • 2 cups blueberries

  • Preheat the waffle maker.
  • In a large bowl, mix the flour, baking powder, and salt.
  • In another large bowl, beat the egg yolks with the sugar until the sugar is completely dissolved. Add the milk, melted butter, vanilla extract, and cinnamon, and whisk with a balloon whisk.
  • Combine the flour mixture with the egg mixture and whisk.
  • Using an electric mixer, beat the egg whites for 1 minute until they reach soft peaks. With a wooden spoon, fold the egg whites into the flour and egg mixture. Add the blueberries and gently incorporate with the wooden spoon.
  • Grease the waffle maker with cooking spray and place enough batter to make 1 waffle. Close the waffle maker and cook for 2-3 minutes or until lightly golden. Repeat with the remaining waffles.
