Chocolate Chip Waffles

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 tablespoons salt
  • 4 eggs, separated yolks and whites
  • 30 grams sugar
  • 2 cups whole milk
  • 1/2 sticks unsalted butter
  • 5 milliliters vanilla essence
  • 100 grams chocolate chips

  • Preheat the waffle maker.
  • In a deep bowl, mix the flour, baking powder, and salt.
  • In another deep bowl, beat the egg yolks with the sugar until the sugar is completely dissolved. Add the milk, melted butter, and vanilla extract, and whisk with a balloon whisk.
  • Combine the flour mixture with the egg mixture and whisk.
  • With an electric mixer, beat the egg whites for 1 minute until stiff peaks form. Using a wooden spoon, mix the egg whites with the flour and egg mixture. Add the chocolate chips to the mixture and stir with a wooden spatula.
  • Grease the waffle maker with cooking spray and place enough batter to make 1 waffle. Close the waffle maker and cook for 2-3 minutes or until lightly browned. Repeat with the remaining waffles.
  • Top with whipped cream and more chocolate chips.
