  • 1/2 cups brown sugar, for chipotle pineapple ham
  • 1/2 cups pineapple jam, for chipotle pineapple ham
  • 1/2 cups chipotle chile in adobo sauce, for chipotle pineapple ham
  • 1 teaspoon nutmeg, for chipotle pineapple ham
  • 1 tablespoon ginger powder, for chipotle pineapple ham
  • 1/4 cups pineapple juice
  • 1 cup canned pineapple, cut into eighths, for decorating the chipotle pineapple ham

  • 3 tablespoons butter, for orange glazed ham
  • 1 tablespoon ginger, finely chopped for orange glazed ham

  • 3 tablespoons cornstarch, for mustard and cranberry ham
  • 1 cup dried cranberries, for mustard and cranberry ham

  • Preheat the oven to 200° C.
  • For the pineapple ham: blend the brown sugar with the jam, chipotle pepper, nutmeg, ginger, pineapple juice, salt, and pepper.
  • Heat a small pot over medium heat and cook the previous preparation until reduced by half.
  • Place the ham in a baking dish and lightly score the surface to form diamonds. Brush with the previous preparation and bake for 1 hour, basting constantly with the juices. Remove from the oven, serve, and decorate with canned pineapple and cherries.
  • For the orange ham: heat a skillet with the butter, cook the ginger and onion, add the jam, apple cider vinegar, sugar, orange juice, cinnamon, and cook until reduced by half. Add the orange peel, rosemary, and cook for 3 more minutes and season.
  • On a baking sheet lined with aluminum foil, wrap the ham with bacon and cover with aluminum foil. Bake for 30 minutes, remove from the oven, insert cloves into the bacon, brush with the previous preparation, and bake for an additional 35 minutes, basting constantly with the juices. Remove from the oven and decorate with orange, cherries, and fresh rosemary. Serve and enjoy.
  • For the mustard and cranberry ham: heat a skillet over medium heat with the butter, cook the garlic, add the mustard and ¾ of the cranberry juice. Hydrate the cornstarch with the remaining juice and add to the mixture, incorporating the cranberries, sugar, and thyme. Cook until thickened and season.
  • Place the ham on a baking sheet and score the surface with straight lines, brush with old-fashioned mustard, pour the previous preparation over it, and bake for 1 hour. Remove from the oven, serve, and decorate with arugula and raspberries.
  • For honey glazed ham: heat a small pot over medium heat with the honey, nutmeg, cloves, and sugar, cook until reduced by half and thickened, set aside.
  • Place the ham on a baking sheet, score the surface with diagonal cuts in a diamond pattern, and decorate with cloves. Brush the ham with honey sauce and bake for 1 hour, basting constantly. Remove from the oven, serve, and decorate with spinach, apple, and cherry tomatoes.
