The pork belly is a perfect cut for baking, as it releases a lot of juice during cooking. Try this dish with sweet and sour flavors thanks to Kikkoman® sauce, which combined with apple will have a unique taste that you will love.
3 Golden Delicious apples, peeled and cored, cut into half-moons
water, for the apples
1 stick cinnamon, for the apples
1 tablespoon mustard, for the glaze
2 tablespoons garlic, finely chopped, for the glaze
1/2 cups rice vinegar, for the glaze
1 1/2 cups Kikkoman® Bittersweet Sauce
1/4 cups butter, in small cubes, for greasing
1.5 kilos pork belly
1/2 cups new potatoes, pink, halved, for accompaniment
1 cup sweet potato, sweet, peeled, quartered
fresh thyme, for decoration

Place the apples in a pot, pour in water to cover, and add a cinnamon stick, cooking over medium-high heat for about 10 minutes, or until the fruit is soft enough. Remove the cinnamon stick, drain, and place the fruit in a large bowl. Let cool.
Mash the apple using a glass or a potato masher. Once you have the puree, add the mustard, rice vinegar, garlic, Kikkoman® Sweet and Sour Sauce, and mix until combined. Set aside.
Preheat the oven to 220 °C.
Tie the pork belly using about 2 meters of cotton string. Shape the piece of meat into a cylinder. Make a knot (with the help of the string) at one end, without tightening too much, and start making loops around the meat, considering that the first knot is the base of the whole tying process; you will gradually see the meat take the desired shape.
Place the tied pork belly in a baking dish, add the cubed butter around the piece of meat. Pour the sweet and sour mixture until the meat is completely covered. Place the pink baby potatoes, the white baby potatoes, and the sweet potato in the empty spaces of the dish. Bake for 60 minutes at 220 °C, or until well cooked. Remember that when baking, you should place a small pot of water underneath the rack where you will put the piece of meat, to ensure it stays moist and avoid drying out.
Remove the piece from the oven, slice thinly, serve, and accompany with the roasted potatoes and sweet potato, garnishing with fresh thyme.
