Artisanal Green Mole

  • 1/4 kilos pumpkin seeds, powder
  • 6 pork ribs
  • 1/2 onions
  • 2 cloves garlic
  • 2 sprigs fresh cilantro
  • 2 cuaresmeño chiles, cleaned
  • 2 leaves lettuce, washed and disinfected

  • Cook the pork ribs with 1 garlic clove, 1/4 onion, and salt. Reserve the broth that comes from the meat.
  • Blend the pumpkin seeds, lettuce, chiles, 1/4 onion, 1 garlic clove, and cilantro.
  • Fry the blended mixture in a pot with a little oil and season with salt and pepper. Do this until it reaches a boil.
  • Add the meat to the mole.
