Prepare the burgers. Divide the meat into 6 equal portions and with wet hands form patties that are 10 cm wide and 2 cm thick. (There’s no need to pack the meat too tightly) Season both sides with salt and pepper.
Brush the onion with oil.
Cook the bacon until crispy for 7-10 minutes on the hottest part of the grill. Place on paper towels to absorb the grease.
Place the hamburger patties on the hottest part of the grill and cook until their internal temperature reaches 63°C (about 4-6 minutes on each side).
If desired, also place the onion slices on the grill, turning them once every 4-5 minutes on each side.
About 2 minutes before the meats are ready, place a slice of cheese on top.
One minute before the meat is ready, place the bun face down on the grill to warm it up (on the cooler part of the grill).
Prepare the burgers. Place the meat with melted cheese on the bun, then add lettuce and onion, and finally bacon, onion, ketchup, and mustard.
