Bacon-Wrapped Pastor Roll

  • 50 grams achiote
  • 1/4 cups white vinegar
  • 3 guajillo chiles, clean, deveined, and seeded
  • 2 ancho chiles, clean, deveined, and seeded
  • 3 cloves garlic
  • 1/4 white onions
  • 1/2 cups pineapple juice
  • 1 tablespoon coarse salt
  • 1 tablespoon allspice berry
  • 2 cloves
  • 1 tablespoon oregano
  • 1 tomato
  • 1 tablespoon cumin
  • 2 tablespoons vegetable oil, divided
  • 10 pork, in sheets
  • 2 cups red onion, sliced
  • 2 cups pineapple, in cubes
  • 1/2 cups fresh cilantro, finely chopped
  • 4 Habanero chiles, cut into rings
  • 20 slices bacon
  • 1 cup Oaxaca cheese
  • pico de gallo, for serving

  • Preheat the oven to 200°C.
  • For the marinade, blend the achiote with the vinegar, chiles, garlic, white onion, pineapple juice, coarse salt, allspice, cloves, oregano, guaje tomato, and cumin until you obtain a smooth marinade.
  • Heat a deep skillet over medium heat with a tablespoon of oil and fry the marinade, cooking until done, about 15 minutes. Remove the marinade from the pan and wash the skillet with Salvo® more power*, grease expert. *vs Salvo Cleaning and Care.
  • Brush the sheets of pork with the marinade and marinate for 20 minutes in the refrigerator.
  • In the same skillet, cook the red onion, pineapple, cilantro, and habanero chile with the remaining oil until softened. Cool slightly.
  • On a baking sheet lined with aluminum foil, place the bacon strips, add the meat, and fill with the pineapple and Oaxaca cheese mixture.
  • Roll up, covering with aluminum foil, and bake for 30 minutes. Remove from the oven, uncover the aluminum, and return to the oven to brown the bacon. Let rest for 15 minutes, slice, and enjoy.
