  • 4 chicken cutlets, medium thickness
  • 8 slices deli ham
  • 8 slices Manchego cheese
  • 1 egg, shake
  • 2 cups breadcrumbs
  • 1 cup Parmesan cheese
  • cooking spray
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons butter, for the sauce
  • 1 tablespoon flour, for the sauce
  • 1 1/4 cups cow's milk, for the sauce
  • 1 tablespoon Dijon mustard, for the sauce
  • 4 tablespoons Parmesan cheese, for the sauce
  • 3 tablespoons Gouda cheese, for the sauce

  • Preheat the oven to 180° C.
  • Place two slices of ham and two slices of manchego cheese on each chicken fillet, roll up and secure with toothpicks.
  • Mix the breadcrumbs with parmesan cheese.
  • Bread the breasts by passing them through egg and then through the breadcrumb mixture.
  • On a previously greased baking tray, place the breasts and spray with a little oil.
  • Bake for 20 minutes or until golden brown and cooked through.
  • For the sauce, in a pot over medium heat add the butter with the flour, the milk, the Dijon mustard, the parmesan cheese, and the gouda cheese, season with salt and pepper and cook for 5 minutes.
