Baked Meat Roll

  • 1 kilo veal
  • 400 grams onion
  • 250 grams fresh cilantro, chopped
  • 1 kilo carrot , chopped
  • 5 eggs
  • sprigs celery
  • 3 garlic
  • 400 grams deli ham
  • 500 grams Manchego cheese, grated
  • 400 grams cream cheese
  • 500 grams zucchini , in slices
  • 400 grams smoked bacon, smoked
  • 350 grams breadcrumbs
  • 300 grams unsalted butter
  • 200 grams chicken bullion
  • pepper

  • Blend the whole eggs, onion, garlic, cilantro, celery, and carrots.
  • In a large bowl, mix the ground meat with the previous blend, as well as the breadcrumbs.
  • Melt half of the butter and add it to the mixture, incorporate the chicken broth, and finish seasoning with salt and pepper, being careful not to over-salt it.
  • Place a large piece of aluminum foil, spread the other half of the butter, put a layer of bacon that perfectly covers the surface, then a layer with the ground meat mixture, followed by a layer of ham, then the manchego cheese and cream cheese, and finally a layer of zucchini slices.
  • Carefully roll the meat, making sure to seal the roll very well on the sides and at the ends, so that the filling does not escape.
  • Seal the roll perfectly with the aluminum foil and place it in a tray in the preheated oven at 300°C for an hour and a half.
