Barbacoa Tacos

Homemade barbacoa tacos mimic the style and typical flavor of barbacoa tacos.

  • 1 kilo beef, brisket or flank steak
  • 85 grams chipotle chile, dry
  • 20 grams ancho chile
  • 1 head garlic
  • aromatic herbs, to taste: cumin, clove, bay leaf, thyme, and oregano
  • vegetable oil, the necessary
  • 1 kilo corn tortillas, for tacos or regular
  • salt, the necessary
  • 1 tablespoon white vinegar
  • pepper, the necessary

  • The chiles are first roasted on a preheated griddle, then deveined and blended with garlic and spices and aromatic herbs.
  • Strain into a deep pot where it will be seasoned and a bit of vinegar added, over high heat, add the meat cut into pieces and previously washed.
  • Steam until the meat softens. The tortillas are passed over a pot with hot oil and removed quickly without letting them brown, to form the taquitos filled with barbacoa.
  • You can chop the meat or shred it, to your liking. They are accompanied with spicy red sauce, lime juice, and chopped onion.
