The chiles are first roasted on a preheated griddle, then deveined and blended with garlic and spices and aromatic herbs.
Strain into a deep pot where it will be seasoned and a bit of vinegar added, over high heat, add the meat cut into pieces and previously washed.
Steam until the meat softens. The tortillas are passed over a pot with hot oil and removed quickly without letting them brown, to form the taquitos filled with barbacoa.
You can chop the meat or shred it, to your liking. They are accompanied with spicy red sauce, lime juice, and chopped onion.
